GuacaHOLY (avocados at their most angelic)
-4 medium-sized, ripe avocados
-Small handful of cilantro, finely chopped (I sourced mine from a neighbourhood herb garden! Local = environmental) *NOTE: to chop cilantro, bend bunch in half, including the stems, and slice. Then, using the back end of your knife, mince as you would a clove of garlic.
-1/3 cup red onion, finely diced
-1/3 cup tomatoes, diced
-1 tsp chili powder
-1 tsp garlic powder
-1/2 tsp red chili flakes
-2 tsp salt (taste as you go - if you are using a saltier chip you don't need to add quite so much salt)
1. Pit the avocados and remove them from their peel. Mash coarsely with a fork (the guac will become smoother as you add each ingredient - do not over-mash right from the get-go).
2. Add the spices, salt, and lime juice (TIP: microwave the limes for 20 seconds before slicing and juicing). Mix well.
3. Mix in the cilantro, onion, and tomatoes. Serve fresh, with the understanding that this guacamole will be gone within five minutes at happy hour. Enjoy :)
